New Nordic Launches in The Heart of Prospect Road

Prospect Road’s newest addition, New Nordic, is a casual tapas style restaurant showcasing the culinary philosophies of the Nordic countries with a modern menu, locally roasted specialty coffee and a large selection of Nordic spirits and cocktails.

New Nordic cuisine is centred around using simple, pure and fresh ingredients. Having readily available quality produce is one of the key reasons Co-Owners and brothers, Mattis and Lukas Vanzati (both originally from Northern Sweden), decided to open New Nordic.

“In South Australia we are incredibly fortunate to have access to some of the finest ingredients in the world, without which it is impossible to follow the principles of New Nordic cuisine. New Nordic is often associated with some of the top fine dining restaurants in the world, but we aim to bring many of the principles to Adelaide in a way that is accessible to everyone. There will be a balance of traditional Scandinavian dishes with dishes that aim to apply New Nordic principles to locally available produce in a setting that is both modern and casual. Adelaide is now at a stage where it is ready to try what the Nordic countries have to offer says Mattis Vanzati.

The family owned and operated business is part of the Palace Nova Cinemas complex and is set to become the newest hot spot on Prospect Road, offering ample outdoor seating, a dedicated bar area and a healthy, clean eating menu that integrates modern Australian cuisine with New Nordic principles. It will be a perfect place to meet for breakfast, lunch, dinner or even just a casual drink.

The menu also features some farm to table dishes, with the restaurant directly engaging with specific local producers and wine makers. New Nordic’s resident Mixologist, Mathieu Seban, has developed a list of signature cocktails that use traditional Nordic spirits, allowing guests to experience a unique drinking experience.

Executive Chef and mother of owners Mattis and Lukas Vanzati, Louise Matschke, has been a professional chef for over thirty years.

“New Nordic is the cuisine we know and love as a family, and the menu features some of the recipes I cooked when my sons were young. Opening our restaurant at this time also represents a larger global movement in Adelaide towards a clean and healthy lifestyle.

“The ideals of New Nordic cuisine match the emerging trend of health focused diets and the importance of ethical and local sourcing of produce. Our guests can expect to see an evolving seasonal menu. Nearly all dishes will be presented in a tapas style that is perfect for sharing and sampling.,” says Louise Matschke.

In a true family affair, Louise Matschke will be working in the kitchen alongside her son and Sous Chef, Liam Vanzati. Together Mattis, Lukas and Liam Vanzati and parents, Louise and Bo, already operate a number of venues including Swedish Tarts, MALOBO and Hermanos Cubanos.

The stunning New Nordicc fit-out has been designed and project-managed by VAXT Design Studio in meticulous detail to mirror the cuisines focus on natural materials in harmony with modern life.

“Modern Australian cuisine, especially recent trends in brunch, is highly derivative of the New Nordic culinary philosophies, so we know that our customers will resonate with the dishes. We want New Nordic to be a space for people to enjoy good quality food and drinks and experience genuine Swedish specialities,” Mattis Vanzati.

Situated in the heart of Prospect Road at 98 Prospect Road, New Nordic will officially launch on Tuesday, 12th December and will be open to the public on Thursday, 14th December for for breakfast, lunch and dinner daily and is the perfect destination to experience true modern Nordic tapas.
