Would you like to learn how to make flaky, buttery, delicious puff pastry from scratch but are overwhelmed by all of the steps involved? Making puff pastry requires correct folding and rolling of the dough and patience in between folds.
Keva will demonstrate from start to finish how to make this very versatile pastry by hand (no machines required, just bring your muscles!). You will learn how to make puff pastry from scratch and 4 different ways to use it. This class will be hands on, as this is always the best way to learn! There will be a maximum of 4 attendees per class, so there’s plenty of opportunity for one on one teaching.
This class will last be held over 4-5 hours, during this time you will learn how to:
• Make puff pastry dough from scratch
• Make butter sheets
• Fold/ laminate your dough & butter to create layers using a rolling pin
• Cut and measure your puff pastry for different uses
• Make crème patissiere
• Make vol-au-vents
• Make a mille feuille
• Make sausage rolls & filling
• Make palmiers/ pigs ears
• Egg wash & decorate
• Bake your puff pastry creations
You will be given all of the recipes, methods, tips and tricks and you will take home approximately 10 x palmiers, 1 x large mille feuille, 4 x vol-au-vents, 6 x sausage rolls, which you have made during the class.
Please note – small class of 4 students only, students must be 18 years or older or accompanied by an adult who is also attending the class. $315.00 per student (fee includes one person only), the full fee is payable upon booking to secure your place.
